Like Mezcal, Sotol also has its plants roast in underground pits to break down the matter and release sweet sticky sap, which is then fermented in wooden vats and distilled in metal stills until the desired alcohol level is reached.

When it comes to taste, Sotol is an experience all its own. Much like a big red wine, it is truly the taste of the terroir on a tongue. The outcome highly depends on where the raw plants have been harvested. Sotol from the forest tends to have herbal notes of mint, mushrooms, and pine, while those from the desert may taste earthy, mineral, spicy, and leathery.
